IN THE KITCHEN: TORTELLINI SOUP

It is safe to say I am now in soup mode. As soon as the weather changes my soup recipes come out of hiding. I decided to try out this soup from one of my favorite cookbooks Fresh & Easy. I have made several recipes out of this book, you can find them here, here and here. This soup is so good, I mean anything with pasta in it is going to be awesome. I found it interesting that the recipe called for adding an olive oil, parsley and caper “dressing” on top of the soup. I have to say it was probably the best thing I have ever had on top of sound. It just added another layer of flavor, the salt from the capers and the nutty flavor from the olive oil made it a little creamier. I am also a fan of adding fresh herbs on top of soup, it just gives it a super fresh taste.
