IN THE KITCHEN: TORTELLINI & ESCAROLE SOUP

Last night I had a craving for a light and easy soup, so I looked online and found this Tortellini and Escarole Soup from Vegetarian Times. This soup hands down is the fastest and easiest soup I have made. My only issue is they never call out adding salt or pepper, so I ended up adding the salt and pepper because it would taste really bland. So make sure you season after every step. I also couldn’t find escarole in the market, so I used spinach and it worked just fine. This soup reminds me a soup I had in Italy minus the shiitake mushrooms.
