IN THE KITCHEN: SOBA NOODLE WITH KALE & MUSHROOMS

I know I have been MIA lately, but I am back with another tasty dish from Self magazine. I love anything involving noodles (I am Italian after all), so it was no surprise that I would make this immediately. I like the combination of kale and mushrooms. Since my last post about mushroom tacos, I was happy to try another type of mushroom from my farmer’s market stand. I think the best part about this dish is the leftovers. I sort of think the next day serving is even better because the sauce really marinates the veggies and noodles. Super easy, super tasty and must try. Enjoy!
