IN THE KITCHEN: SHRIMP BURRITO

Last night I had a craving for a fresh shrimp salad with avocado, red onion, cilantro and fresh lime juice. Of course I had to share my craving with my friend Ben, he then told me about a shrimp burrito he had. It got me thinking, why not combined all of those ingredients into a burrito, that way I get some of those carbs. Man was that meal delish! The only real cooking involved was the shrimp, which only takes 4 minutes. I combined all the ingredients in a bowl, toss with a little olive oil, cholula, salt pepper, and the lime juice and you’re good to go. For all of my vegan friends out there, you can easily substitute the shrimp for tofu, which I might try next week!

INGREDIENTS (what I made makes two hearty burritos)

  • 1 whole avocado, diced
  • ¼ red onion, diced (I really just eyeballed the amount of onion)
  • handful of cilantro, diced
  • handful of cherry tomatoes, cut into bit size pieces
  • 1 lime 
  • 8 whole uncooked shrimp
  • 1 tbsp olive oil, half for ingredients other half for cooking the shrimp
  • cholula, to taste
  • salt, pepper & chili powder
  • 2 wheat tortillas

Combine the first 5 ingredients into a bowl, add half the lime juice and little of olive oil, salt, pepper and cholula. 

Take the shrimp and toss them with the salt, pepper and chili powder. Heat half the olive oil in a pan add the shrimp and cook until light pink (about 2 minutes on both sides). Once shrimp is cooked, cut into bite size pieces and add them to the other ingredients. Toss in the remaining lime juice, olive oil and if you want a little more heat add more cholula. 

Place the mixture on top of the wheat tortilla, roll up and enjoy!
