IN THE KITCHEN: SALMON WITH STIR-FRIED RICE

A few weeks ago I tried this dish, mainly because I was tired of the usual salmon dishes I make. I didn’t make the pineapple sauce and I did not grill the salmon. I prepared the salmon the usual way I do, season with salt and pepper heat some coconut oil in a pan and cook for 8 minutes (4 minutes on each side). As for the rice, it was really tasty I liked the all the veggies, and the bok choy is great because it soaks up some of the sauce from the rice. I definitely need to keep the rice recipe in my back pocket, especially on those days that I need to eat more veggies. Easy to make and super healthy. Enjoy!
