IN THE KITCHEN: SALMON WITH BOK CHOY & APPLE SLAW

This recipe has been in heavy rotation in my kitchen lately. It is probably the fastest, easiest recipe to date. To keep on track with eating protein in the beginning of the week, this salmon dish from RealSimple’s November 2011 issue was perfect. I love the combination of the crunchy bok choy, the sweetness from the apples and the creamy yogurt. This side dish can be served with any protein.

INGREDIENTS

  • 1 tsp olive oil
  • 1 1/14 pounds skinless salmon fillet, cut into 4 pieces
  • kosher salt and black pepper
  • ½ head bok choy, thinly sliced (about 6 cups)
  • 1 red apple, cut into bite size pieces
  • 4 scallions, thinly sliced
  • 1/3 cup plain low-fat yogurt (I use greek yogurt)
  • 2 tbsp fresh lemon juice

Heat the oil in a large nonstick skillet over medium high heat. Season the salmon with ¼ tsp salt and pepper and cook until opaque throughout, 3 - 4 minutes per side.

Meanwhile, in a medium bowl, toss the bok choy, apple, and scallions with the yogurt, lemon juice ½ tsp salt, and ¼ tsp of pepper. Serve with the salmon.
