IN THE KITCHEN: PICKLED CUCUMBERS

When the weather gets warmer, there are always certain foods that I crave. I think it’s because they bring back childhood summer memories. Pickled cucumbers are definitely one of those memories. This is a dish you can make days in advance, and gets better with time. This dish is perfect, for any BBQ or quick snack.

INGREDIENTS

  • 1 large cucumber, peeled and thinly sliced

  • ¼ yellow onion, thinly sliced into half moons

  • ½ vinegar

  • Water, salt and sugar to taste

  • Sesame seeds, optional

Combine all the ingredients in a medium bowl. Toss to coat and leave in refrigerator for 6 hour to 24 hours. Enjoy!
