IN THE KITCHEN: GREEN BEANS AND EGGS

Even though I think I eat pretty healthy during the week, there are times when I doubt myself. A few weeks ago I wanted to challenge myself to cook only what I get at the farmers market. Low and behold I made this dish, Green Beans with Eggs, Chiles and Cilantro. Oh man was is good. One thing I find amusing, I use to HATE green beans, but this dish is so yummy I couldn’t stop eating it. Super easy, really healthy and full of great flavors (I am always a fan of dishes with chilies). Try it out you won’t be disappointed.
