IN THE KITCHEN: FRIED JACKFRUIT TOSTADAS

The other night I had my usual craving for Mexican food. I remembered I still had leftover jackfruit from this recipe I made awhile back. This time I wanted to liven it up and see if I could transform it. So I decided to fry the jackfruit in coconut oil, and man was it good. I had about a cup of jackfruit and I fried it in about 2 tbsp of coconut oil. It took about 15 minutes for the jackfruit to get all nice and crispy. 

After it is cooked, I put it on a paper towel so it could soak up any excess oil. I then topped it with some lime, cilantro rice, which is super easy. Just cook the rice then add chopped cilantro and half a lime, depending on how much you are making. I then topped the jackfruit with some pico de gallo and guacamole (you can reference this recipe.)

I loved all the different textures in this dish; you have the crunchy texture from the toasted tortilla, the crispy jackfruit and the creamy guacamole. I highly recommend trying out this dish! Enjoy!
