IN THE KITCHEN: CAPRESE PIZZA

The other night I had a sudden craving for pizza. For a hot second I thought about ordering from one of my favorite places Gjelina takeaway, but quickly decided to make it myself. Since I still have a love for caprese salads, I decided to make it on a pizza. It was probably the best decision I made that entire weekend. Pizza is so easy to make at home, the only downside is having left over dough since I was making it for myself. I think next time I am going to try and make my own pizza dough, so stay tuned.

INGREDIENTS (what I made, makes 1 small pizza so adjust accordingly if using the entire 1 pound dough)

  • 1 pound pizza dough, room temperature

  • 3 tbsp. tomato sauce

  • ΒΌ cup shredded mozzarella

  • 1 tomato, thinly sliced

  • Burrata, cut into small pieces

  • Hand full of fresh basil, leave whole

  • 4 anchovies (optional)

  • Salt, pepper and olive oil

Heat oven to 450. Spray baking sheet with cooking spray, then spread out the dough into your desired shape. Make sure the dough is evenly spread out. Spread the tomato sauce over dough, and then sprinkle with mozzarella. Add the tomatoes then drizzle with olive oil, salt and pepper if desired. Place in oven and bake for 25-30 minutes, until the crust gets gold and brown.

Take pizza out of oven, top the pizza with the small pieces of burrata, anchovies and basil. Slice up and enjoy!
