IN THE KITCHEN: BLACK BEAN TOSTADAS WITH GREEN APPLE AVOCADO SALSA

The other night I had a craving for Mexican food, so I decided to be inventive and make a black bean tostada with a green apple and avocado salsa. I think the best part about it was I already had all the ingredients. I really liked the salsa; it was super refreshing with the green apple. I made enough for two servings, so if you want to make more just up the amount by half.

INGREDIENTS

  • Corn tortillas

  • 1 8 oz can black beans

  • ½ green apple, peal skin and dice

  • 1 avocado cut into bite size pieces

  • Handful of cherry tomatoes, cut in half

  • ½ fresh limejuice

  • 2 tbsp cilantro, chopped and some for garnish

  • Olive oil, I eyeballed this so about 1 tsp

  • Cayenne pepper to taste

  • Salt & pepper to taste

Preheat the oven to 350. Place tortillas on a baking sheet and lightly coat both sides of the tortillas with olive oil. Place in oven and bake both sides for about 10 minutes, you might want to watch them periodically. Bake until crispy.

Meanwhile, place the beans in a saucepan (you can also use the microwave) and cook beans through. In a medium bowl combine the apple, avocado, tomatoes, limejuice, cilantro, olive oil, cayenne pepper, salt and pepper. Mix together and place in refrigerator until all the other ingredients are cooked. 

Once tortillas are crispy place on plate, top with beans, salsa and if you have Greek yogurt put a dollop on top. Garnish with cilantro and enjoy!
